Vegan Christmas Biscuits
Hendrik's mum always has endless homemade cookies and biscuits around the house over Christmas and New Year so I wanted to create something similar for Hendrik which I could also indulge in! So here we have my Vegan Christmas Biscuits, made with just 3 ingredients!
All you need is:
100g Vegan butter (I used PURE which is a vegan sunflower oil spread and although it contains Palm Oil which I'm not happy about it is the best one I've found so far for baking)
50g Sugar (caster sugar or coconut sugar)
140g self raising flour (or 140g rice flour with 1/2 tsp baking powder)
Pre-heat the oven to 180 degrees Celsius.
Mix the butter and sugar in a bowl with an electric handheld mixer and then add the flour.
Mix again and then bind the dough with your hands.
Use plenty of flour to coat the surface and roller to stop sticking.
Roll out and use your favourite cutters, or just roll them into balls, and squish them a little.
Place on a baking tray lined with non-stick baking paper and place in the oven for 10 minutes.
Leave to cool and if there are any left top with a little icing sugar mixed with a little water to decorate (make sure its not too runny - you want it to coat the back of the spoon.
