This weather is certainly pushing all my hopes of a summer in September out of the window and inviting all the warm autumnal foodie cravings in!
So its time to break out the waffle iron! The last time I used my waffle iron, the recipe was a typical American waffle recipe which I found online somewhere, but determine to not get back into those bad habits it was time for me to create in the kitchen!
And that I did and it tastes delicious! I can even get this one past my husband without him noticing!
Makes approx. 6 waffles depending on the size and shape of your waffle iron.
1 cup Flour of your choice (can be plain flour, oat flour, buckwheat, rice flour...all options are open! experiment!)
Chickpea juice (I used the juice from a 400g carton of chickpeas - saving the chickpeas for hummus)
1tbs melted coconut oil
1/2 cup Almond Milk
1/2 tsp Baking powder
1/2 cup Raisins
2 tsp Cinnamon
Coconut sugar (optional)
Put the flour, baking powder, cinnamon, melted coconut oil and chickpea juice in a bowl and mix with a wooden spoon. Start to add the almond milk until it starts to form a batter, you may need a little more or little less almond milk depending on the flour you use to make it a thick but glossy and pourable batter consistency. Then add the raisins.
For the cinnamon apple topping, cut up the apples into little chunks and place into a saucepan on a low heat with a little water and allow to soften. Perhaps if you like sweetness add in a little coconut sugar.
When you're ready to create start to preheat your waffle iron. Be sure to grease your waffle iron slightly with coconut oil. Pour the batter into the centre, close the lid and again this is very waffle iron specific but I tend to give my waffles 4 minutes.
Once crispy on the outside and slightly soft in the middle remove and top with your softened apple, a sprinkle of cinnamon and a drizzle of maple syrup!
