Summer Salad with Sun-dried Tomato Quinoa Balls
Need some lunch or dinner inspo? I go through stages of having little to no inspiration for new creative delicious meals and often, especially recently I have been opening the fridge and checking out my veggie patch for whats ready and then somehow chucking it all together.
If you are in need of a little help to create something super quick and easy I am here with a delicious summer salad with sun-dried tomato quinoa balls.

Ingredients
Serves 2
For the salad (can really be whatever you have in the fridge or garden).
I used:
1 Mango
Handful of Runner beans
10 Cherry Tomatoes
5 Sliced Radish
Handful Lettuce leaves
Handful Toasted Pine nuts
Alfalfa
1 Avocado
Olives
For the Dressing:
1/2 tsp Wholegrain mustard
3 tbs Olive Oil
Pinch of Salt
1 tsp Pepper
1 tbs Cider Vinegar
For the balls:
1 cup quinoa
1tsp Tamarind
Handful of sun-dried tomatoes
1/2 cup of rice flour
Salt
Pepper
Method
Start by cooking your quinoa (make sure you rinse it first), refer to the packet as all seem to be slightly different, but I use a general room that one cup of quinoa is 3 cups of water. Bring quinoa to the boil and add in 1 tsp of Tamarind, stir it in and allow to flavour the quinoa. Once the quinoa is cooked allow to cool a little.
Use the cooking time of your quinoa to start preparing your salad. Simply chop all your ingredients for the salad and throw them in a big bowl.
For the dressing, mix all the dressing ingredients together and give it a good stir or shake if you have a dressing bottle or I use a glass jam jar. Once shaken add to your salad.
In a separate bowl chop your sun-dried tomatoes and add in salt and pepper to taste. Once the quinoa is cool enough to handle, mix in your quinoa. Add in the rice flour and give it a good mix. Using your hands take scoops of the mixture and make little balls.
Grab a frying pan and melt a little coconut oil in the base of the pan and gently start transferring the balls into the pan. Cook over a gentle heat until browned on all sides.
Et voila! Pop your salad on a plate topped with a few sun-dried tomato quinoa balls and eat up!
